Apple Cinnamon Scones x NDF Focus

Ingredients

  • Flour 2¾ cups
  • Coconut Sugar ½ cup
  • Salt ¾ tsp
  • Baking Powder 1 tbsp
  • Cinnamon ½ tbsp
  • Unsalted butter (cold + cubed) 8 tbsp
  • Chopped apples 1 cup or about 1 medium apple
  • Optional: Butterscotch or white chocolate chips ¾ cup
  • 2 large eggs
  • Vanilla 1 tsp
  • Applesauce, unsweetened ½ cup

Steps

    Whisk together dry ingredients (flour, sugar, salt, cinnamon, and baking powder)

    Work in cold butter with a fork or pastry cutter until evenly crumbly

    Stir in apples and butterscotch chips
  4. 4
    In a separate bowl, whisk together liquid ingredients (eggs, vanilla, and applesauce)

    Add liquid mixture to dry and combine until a thick dough forms

    Flour a parchment surface

    Divide dough in half and make two round balls

    Flatten round balls into 5” circles (about ¾” thick)

    Cut each round into sixths

    Freeze wedges for 30 minutes

    Gently pull apart wedges so they have room to expand and brush tops with milk

    Bake at 425°F for 18-20 minutes

    Let cool and drizzle top with apple butter or melted butterscotch chips
