Ingredients
- Flour 2¾ cups
- Coconut Sugar ½ cup
- Salt ¾ tsp
- Baking Powder 1 tbsp
- Cinnamon ½ tbsp
- Unsalted butter (cold + cubed) 8 tbsp
- Chopped apples 1 cup or about 1 medium apple
- Optional: Butterscotch or white chocolate chips ¾ cup
- 2 large eggs
- Vanilla 1 tsp
- Applesauce, unsweetened ½ cup

Whisk together dry ingredients (flour, sugar, salt, cinnamon, and baking powder)

Work in cold butter with a fork or pastry cutter until evenly crumbly

Stir in apples and butterscotch chips

In a separate bowl, whisk together liquid ingredients (eggs, vanilla, and applesauce)

Add liquid mixture to dry and combine until a thick dough forms

Flour a parchment surface

Divide dough in half and make two round balls

Flatten round balls into 5” circles (about ¾” thick)

Cut each round into sixths

Freeze wedges for 30 minutes

Gently pull apart wedges so they have room to expand and brush tops with milk

Bake at 425°F for 18-20 minutes
