Ingredients
- Unsalted butter, softened ½ cup
- Coconut sugar 1 cup
- Loving Energy 2-3 servings
- Vanilla 1 tsp
- 1 large egg
- AP flour (or 1:1 gluten-free flour substitute) 1.5 cups
- Baking soda ½ tsp
- Baking powder ¼ tsp
- Salt ½ tsp
- Chocolate chips measure with your heart
- Optional mix ins: nuts, white chocolate chips, dried fruit, coconut chunks

Cream butter and coconut sugar in electric mixture until fluffy

Add in egg and vanilla and beat to combine

In a separate bowl, whisk together dry ingredients

Add dry ingredients to wet ingredients and beat to combine

Stir in mix-ins

Form 45g (or golf-ball size) balls of dough and freeze for at least 30 minutes

Preheat oven to 375°F

Line a baking sheet with parchment paper and place balls of dough on parchment flattening slightly (balls will not flatten much on own in oven)

Bake balls for 9 minutes

Optional: to get perfectly round cookies, immediately (while still warm) take a medium glass or mug and circle around cookies quickly, but gently to shape them into perfect circles
